Mole enchiladas filled with añejo cheese

Ingredients:

  • 12 Tortillas 
  • 1/2 cup Vegetable oil
  • 3 cups Chicken broth
  • 8 tbsps Mole La Costeña
  • 1 cup Crumbled anejo cheese
  • 1 cup Mixed vegetables
  • 4 tbsps Sour cream
  • 60 g White onion rings
  • 1 tbsp Thinly sliced epazote herb

Directions:

1. Lightly dip tortillas in hot oil. Set aside.

2. Heat chicken broth. Add Mole sauce; dilute and boil until thickened.

3. Mix anejo cheese with the mixed vegetables. Fill tortillas with this mixture and roll. Pour hot mole sauce. Top with sour cream, onion rings and epazote herb.
