Enchiladas
Delicious easy to make enchiladas. This recipe makes 8 enchiladas!
Ingredients
- 500g ground beef
- 1 Onion
- 2 cloves of Garlic (chopped)
- 2 cans of Old El Paso Enchilada Red Sauce
- shredded cheese: cotija, hot pepper cheese blend, gouda, cheddar cheese – anything you love
- flour or corn tortillas
- OPTIONAL:
- Jalapeños
- corn and kidney beans
- top enchiladas with fresh toppings like green onions, sour cream, fresh cilantro leaves and lime juice
Method
- Preheat oven to 180. Lightly grease baking dish with cooking spray or oil.
- Over medium-high heat, in a nonstick skillet, cook beef and onion until browned. Drain excess oil.
- Stir in 1 1/2 Cans of the Old El Paso Enchilada Sauce (add beans and corn if wanted). And cook for 10 min on medium heat. Add additional spices to your desire.
- Spoon 1/3 cup beef mixture into the centre of each tortilla
- Wrap tortillas and place seam side down in baking dish.
- Pour the remaining 1/2 can of enchilada sauce on top of rolled enchiladas. Top with remaining 3/4 cup cheese.
- Bake 15-20 minutes.
- Top with cilantro, onions, jalapeños and sour cream when serving, and squeeze fresh lime juice on top.
