Enchiladas

Delicious easy to make enchiladas. This recipe makes 8 enchiladas! 

Ingredients

  • 500g ground beef
  • 1 Onion 
  • 2 cloves of Garlic (chopped) 
  • 2 cans of Old El Paso Enchilada Red Sauce
  • shredded cheese: cotija, hot pepper cheese blend, gouda, cheddar cheese – anything you love
  • flour or corn tortillas
  • OPTIONAL:
    • Jalapeños 
    • corn and kidney beans 
    • top enchiladas with fresh toppings like green onions, sour cream, fresh cilantro leaves and lime juice

Method

  • Preheat oven to 180. Lightly grease baking dish with cooking spray or oil.
  • Over medium-high heat, in a nonstick skillet, cook beef and onion until browned. Drain excess oil.
  • Stir in 1 1/2 Cans of the Old El Paso Enchilada Sauce (add beans and corn if wanted). And cook for 10 min on medium heat. Add additional spices to your desire. 
  • Spoon 1/3 cup beef mixture into the centre of each tortilla
  • Wrap tortillas and place seam side down in baking dish.
  • Pour the remaining 1/2 can of enchilada sauce on top of rolled enchiladas. Top with remaining 3/4 cup cheese.
  • Bake 15-20 minutes.
  • Top with cilantro, onions, jalapeños and sour cream when serving, and squeeze fresh lime juice on top.
