As Thanksgiving approaches, we’re all about those comforting, savoury dishes that bring everyone to the table. Our Cheddar & Chive Biscuits are the ultimate crowd-pleaser! These fluffy, cheesy, and perfectly golden biscuits add a delicious twist to your Thanksgiving meal. Ingredients
- 240 ml cold buttermilk
- 115 g butter (plus extra for brushing)
- 250 g all-purpose flour, plus extra for the counter
- 1 teaspoon sugar
- ½ teaspoon baking soda
- 2 teaspoons baking powder
- ¾ teaspoon kosher salt
- 140 g finely shredded cheddar cheese
- 30 g fresh chives, finely sliced, plus extra for garnish if desired

Prepare the Oven and Pan: Preheat your oven to 220°C (425°F). Line a baking sheet with parchment paper or lightly coat it with cooking spray.

Chill the Buttermilk: Measure out 240 ml of buttermilk and place it in the freezer for about 10 minutes. This helps to make the biscuits extra fluffy.

Melt the Butter: Place 115 g of butter in a microwave-safe bowl. Cover it with a paper towel and microwave on high for 30 seconds. If it’s not fully melted, microwave in 10-second intervals until melted. Set aside to cool slightly.

Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Stir in the shredded cheddar and sliced chives.

Combine the Buttermilk and Butter: After chilling the buttermilk, pour it into the melted butter. Stir with a fork until small clumps form. This is key for achieving those tender layers!

Mix the Dough: Add the buttermilk mixture to the dry ingredients. Using a sturdy spatula, stir just until the flour is fully incorporated and the dough pulls away from the sides of the bowl. If the dough is too sticky, add a tablespoon of flour at a time until it’s slightly stiff but still soft.

Knead the Dough: Generously flour your work surface and transfer the dough onto it. Knead the dough about 5-6 times (around 20-30 seconds), then pat it into a 6-inch (15 cm) square about 4-5 cm in height.

Cut the Biscuits: Using a biscuit cutter, cut out the biscuits and place them on the prepared baking sheet, spacing them about 4 cm apart. Gather any leftover dough, knead briefly, and cut additional biscuits until all the dough is used.

Bake: Place the baking sheet in the oven and bake for 10-15 minutes, or until the tops are golden brown and crispy. Check around 8 minutes as baking times may vary.

Add a Finishing Touch: Melt the remaining butter and brush it over the tops of the hot biscuits. Sprinkle with extra chives for added flavour and presentation.
