Pulled pork recipe

Ingredients

  • 2 tsp smoked paprika
  • 2 tsp ground cumin
  • 2 tsp pepper
  • 2 tsp brown sugar
  • 1 tsp salt
  • 1 cup cider
  • 1 cup BBQ Sauce
  • Pork Joint (about 1kg)
  • a mugful of a good smoky barbecue sauce

Method

Did you know that you can also use pork joints to make juicy and mouthwatering pulled pork? For burgers, burritos, or on top of mac and cheese. We will show you how, all you need is some pork (joint), some seasoning, an oven, and your favorite apple cider

STEP 1

Mix together 2 tsp each smoked paprika, ground cumin, pepper, and brown sugar, plus 1 tsp salt for those who like it spicy can also add some Old Bay Seasoning. Rub over the 1kg pork joint.

STEP 2

Put the pork in a big casserole dish, skin-side up, and pour in some of your favorite apple cider.

STEP 3

Cover with a lid and cook in the oven at 150C/130C fan/gas 2 for anywhere between 4 and 8 hrs until falling apart. Check in every few hours, if it gets dry add some more apple cider. 

STEP 4

When it's ready take the meat out of the oven and place it in a big dish. Don't throw away the liquid, keep it in the casserole! 

STEP 5

Now cut the skin off, then shred the meat using two forks. Ditch any fatty bits, and skim any excess fat off the surface of the sauce.

STEP 6

Add a mugful of Sweet Baby Rays BBQ  sauce to the casserole, and mix it in.

STEP 7

Put the pulled pork back in the casserole with the juices so it stays moist. Season as you like

STEP 8

Enjoy it as a burger with some coleslaw and cabbage or on top of Mac and Cheese!
