  • 2 cups Gluten Free 1-to-1 Baking Flour
  • 2 Tbsp Sugar
  • 1 tsp Kosher Salt
  • 1 ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 ½–2 cups Water or Milk
  • 2 Eggs
  • 2 Tbsp Oil or melted butter (3 Tbsp for waffles)
  • 1 tsp Vanilla Extract (optional)


  1. Preheat a well-oiled skillet over medium-high heat or preheat a waffle iron according to manufacturer’s instructions.
  2. In a medium bowl, combine flour, sugar, salt, baking powder and baking soda. Set aside.
  3. In a large mixing bowl, whisk together water or milk, eggs, oil or melted butter and vanilla extract (if using). Add dry ingredients and whisk thoroughly.
  4. Portion batter by ¼ cup scoops onto hot skillet and cook pancakes 3–5 minutes per side, until cooked through. For waffles, cook following manufacturer’s instructions. Serve hot.
